Past finales have been pretty physically intense, sometimes making the final teams travel to various locations within one day, and not always making the amount of sales the determination of who won one season it came down to a foot race. This season finale was a little more low-key as the season stayed on the West Coast instead of traveling across the country, but the final location put a new spin on things — Catalina Island. How were the remaining teams going to get their trucks to an island? Simple, they were going to be placed on a barge and sailed to the location. But teams still had their work cut out for them to earn a unique advantage. After four weeks of getting to learn how things work in their trucks and the art of selling food to people on the street, host Tyler Florence threw a new challenge at the teams: they had to run hot dog carts and the team earning the most money would get an advantage.
While taking a journey through a specific region or route, every week the food truck that makes the least profit is eliminated and sent home, while the rest of the food trucks continue on to the next city. They're usually given "seed money" at the beginning of each episode that goes towards grocery shopping. The teams are assigned different challenges every week for a chance to earn more money usually in the form of selling the most of a special dish or making a version of a local delicacy for Tyler and a guest judge. They're also thrown obstacles that hinder their ability to make normal sales for example, switching their menu to vegan food or being unable to restock supplies for the day. In the following seasons save for season six , food trucks were provided to novices from home cooks to former restaurateurs who have dreamt of owning and operating their very own food truck. In seasons three, four, and five, the winning team got the money and got to keep the food truck they were provided with by the show.
